2. GROUNDED SPICES

Technology/Process Description:

Cochin Spices has four dedicated plants for different products namely:

Plant 1: Whole Black Pepper

 

Plant 1 is an automated plant with the capability to process whole black pepper to customer specific requirements. The plant is equipped with sophisticated machinery supplemented by rare earth magnets placed at strategic points to ensure a metal-free product conforming to the exacting standards of ASTA, USFDA, UK Food Safety Act and EU regulations. A steam sterilizing facility has been incorporated in the black pepper line, allowing us to steam sterilize the pepper if the customer requirement demands sterilization by steam.

 

 

Plant 2: Crushed & Ground Red Chilies (Red Peppers)

 

Plant 2 is an automated plant equipped with lines to process both crushed and ground red chilies simultaneously, fulfils the ever increasing requirements of customers worldwide. The plant utilizes pneumatic conveying and is designed to minimize manual handling of the product. Rare earth magnets and metal detector placed at crucial locations provides a safeguard against ferrous and non-ferrous metal contaminants.

 

 

 

Plant 3: Ground Ginger, Ground Turmeric, Ground Seed Spices & Curry Powder (Spice Mixes)

This is a closed and automated processing plant with the benefit of interchangeability between ginger, turmeric, various seed spices and spice mixes. The plant is equipped with a unique system that yields high quality ground product while maintaining levels of volatile oils and active ingredients indigenous to the respective spices. A rare earth magnet at various points in the processing line ensures a metal-free product. These products can be supplied in compliance with the cleanliness specifications of ASTA, USFDA, UK Food Safety Act and EU regulations.

 

 

 

 

 

 

Plant 4: Cracked and Ground Black Pepper

 

The plant, Plant 4, is integrated with the whole pepper processing plant to enable cleaning of the pepper prior to grinding. The imported roller mill and sifting system ensures clean cuts and a finished product free of dust. The roller mill, by virtue of its construction is adaptable to mill product to varying specifications with accuracy. The processing line is equipped with rare earth magnets located at crucial points to prevent metal contamination. The products meet the relevant cleanliness specifications of ASTA, USFDA, UK Food Safety Act and the regulations of the EU.

 

Technology/Product Specifications:

 

·         Whole Black Pepper

 

Specifications:  The whole, dried, mature berries of the plant Piper Nigrum. The berries are black to dark brown in color with a hot, biting and pungent taste and a sharp and penetrating odor. The finished product is clean, washed and mechanically dried and packed in burlap bags of 50 kgs (110 lbs). The product can be processed and packaged to meet varying customer specifications. Sterilization (by steam or ethylene oxide) can be done at the option of the customer.

 

Moisture:

12% max.

Foreign matter:

1% max.

Bulk Density:

560 gm/litre min.

·         Cracked / Ground Black Pepper

 

Specifications:  Made from the mature, dried and clean berries of the plant Piper Nigrum. The product is black-grey in color with a hot pungent biting taste and sharp penetrating aroma. The pepper cam be cracked or ground to different specifications / mesh sizes, as per the customer requirement.

 

Particle size:

Half crack / Butcher grind / Fine ground

·          Crushed and Ground Red Chilies

 

Specifications: - Made from the dried, ripe and mature fruit of the plant Capsicum Annum. The product is red to red-orange in color with biting hot flavor and a pungent aroma. The pungency level of the crushed or ground product can be varied by selecting and blending, depending on the customer requirement or specification. Sterilization can be done if required.

·         Ground Alleppey Turmeric

 

Specifications: - Ground Ginger is made from the clean, dried rhizomes of the plant Zingiber Officinale. The product has a strong lemon aroma and a pungent taste. It is normally ground to a USS # 35 with volatile oil of 1% (min). Ground Turmeric (Alleppey & Madras) is made from the clean and dried rhizomes of the plant Curcuma Longa. The product is a yellow to orange-yellow powder with a spicy aroma and a bitter pungent flavor. The granulation and curcumin content can be varied according to the required specification. Sterilization can be done at the option of the customer.

 

Curcumin levels:

5% / 5.5% min.

Granulation:

95% pass thro' USS# 60 mesh ( 250 microns )
